The origin of Chiles en Nogada dates back to August 1821, three centuries after the founding of the city of Puebla and the year of Mexico’s independence. It was created by the Augustinian nuns of the Convent of Santa Mónica in Puebla to celebrate the visit of General Agustín de Iturbide, who had just signed the Treaties of Córdoba, recognizing Mexico’s independence from Spain.
It is said that, in honor of his name day (Saint Augustine, on August 28) and to celebrate independence, the nuns prepared a dish that featured the colors of the new Mexican flag:
Green from the poblano chile, White from the nogada (a sauce made with Castilian walnuts), and
Red from the pomegranate.
This recipe symbolized the new national identity, combining local and European ingredients (such as walnuts and acitrón), reflecting Mexico’s cultural mestizaje.
